Will my transplanted potatoes be ok to eat?

I know that if you expose potatoes to sunlight while they're growing, the exposed tubers become poisonous. But what if they were just exposed to sunlight for less than a minute? I had an errant potato plant growing in my garden. (Long story.) When I tried to transplant it to a more appropriate spot, some of the dirt fell off, exposing the roots. Will those fledgling potatoes still be ok to eat if I quickly re-buried them?
